    I guess I am a lost cause! I had some hot n spicy chili with crackers, and a slice of Pecan Pound Cake, all of it fattening as Hell and nothing organic at all, but, yum, yum, it was goood!!!!!!!!

    pay attention jj…alyssa is tia’s daughter! it’s not hard to figure that out. i have to say that every mom gets overwhelmed at some point. but that doesn’t mean she should’nt have had her children. and if you think that your marathon cooking sprees are a good reason not to have children then i feel sorry for you. it’s great that you “live off the land” and eat whole, natural foods but don’t get on your soapbox and try to make the rest of the world join you. some of us, would rather take a few short cuts with cooking and enjoy our children. and when i say a few short cuts i do not mean eat take out all the time and serve unhealthy processed foods all the time either. there is a balance, and i think most moms are aware of it and make sure that their children are eating the right foods. i can tell that tia is a good mom just by reading her posts.

    thanks for the book info. i have actually been there, done that with “living off the land” and it’s not something i care to do with such intensity. i just don’t have the inclination to do that anymore. i have found a balance that works for my family. i will say that after participating in all these posts about food prep i am going to try to lean a bit more on the healthy food aspect. so, thanks!

    Just because Tia’s mother keeps her daughter when she works doesn’t mean Alyssa is being pawned off on anybody…she’s much better off with family than elsewhere. And in terms of sacrificing time, I’m perfectly willing to sacrifice my time for the benefit of my daughters. Nonetheless, my husband and I have a date night twice a month and my wonderful foster sister keeps the babies. It’s all about planning; it’s all about prioritizing.

    Good for you Tia! That’s awesome that you don’t “pawn” your daughter off to people…Somebody must watch her when you work…unless the hospital that you work at allows you to take her along…which somehow I really doubt.
    Just because a person can have a baby does not make them suitable for the role…having a child is the easy part! It is really annoying when you hear mothers squawk that they have no time for themselves anymore ever since the kids arrived…well, you have nobody but yourselves to blame. No – I don’t know you as you don’t know me and everyone here on this blog does not know each other. For some reason people think that they know me…and they assume that I don’t have children. Maybe I do – but just haven’t mentioned it…I might even be taking all of you for a ride and you don’t even know it…I might even be a famous celebrity and you don’t even suspect a thing.
    So – Tia, you are just as guilty of assuming things about me!!

I actually think its ignorant for you to even think i shouldnt have had a baby. You dont know me. You still wont know until you have a child….if your ever BLESSED with one.

    FYI – JJ is an original – I am not N and she is not Me!!

    Tia – doesn’t your mother watch your infant for you when you go to work? I’m sure you can ask a family member to babysit for you so that you can have more time to tend to other things…like watching a cooking show or two…but do not watch Rachel Ray – she is very annoying, she has a big mouth and cooks crappy food. If you are finding it too difficult to juggle a career and and a home and a baby then maybe you shouldn’t have had a baby in the first place. But I’m sure there are a lot of mothers out there that prepare their own baby food too as well as food for the adults in the house and have a full-time job, etc…it’s not impossible…just more challenging. My mom did all that when she raised me and my brother…everything we ate was homemade and fresh – no jarred baby foods.

    Cathi – Go read the book: “Animal, Vegetable, Miracle” and then let’s see who is the freak…getting back to basics and living of the fat of the land is the new way to live and survive in a highly industrialized nation of fast food and genetically modified foods….just read the book…or do a search on-line – the writer’s name is Barbara Kingsolver…she’s an American – you’ll like her. She’s not like me, she’s actually nice 😀

    Oriana – You betcha 😉 I just made a batch of spicy red lentil burgers with Tandoori spices and brown basmati rice…and steamed rapini and for dessert a pumpkin chai-spice loaf cake made with organic pumpkin puree, organic eggs, flour and soy milk.

    When I was newly married in 1991 the first meal I ever made was from a recipe called “wife’s dinner” and involved stove top stuffing, pork chops & apples… and it was damn good!!! LOL
    Oriana – regarding your missing posts, I think I was “banned” from this website for the past few days. Maybe I am being paranoid but this was the only site I couldn’t access and it happened at the time of the “DJ Tanner” religion debate.

    tia…i have a recipie that i like using stove top stuffing prepared as directed (except using chicken broth instead of the water) spread on bottom of pan..then place boneless skinless chicken breasts (marinated in a little italian dressing) on top. add a little chicken broth over top and bake in oven for about 30-35 minutes. i’ve never added veggies in the pan like you do with the meatballs, but i think i might try it next time. it will save me the step of dirtying a different pot for veggies. i’ve tried it with regular chicken stove top and with the whole wheat chicken stove top and it is good with both.

    So, I got my nails done today. A royal blue. I feel so regal. I go to this nail place close to home but am thinking of switching over to another town. The woman who does my nails has body oder. Smells like she just ate tacos.

    But I digress. I think I will try the color salmon next time. Maybe that will mask that fowl odor of hers. I like essie, but this new color is kewl too. But it’s OPI.

    #49 – did you know that there are blogs dedicated to the joys of cooking…recipes for the taking and the cooks use REAL ingredients and not something called “stove top stuffing” also known as ‘soggy sponges with a chemical aftertaste’.

    No CATHI – most people I know do not use boxed or frozen prepared foods as an add in to create a meal…if someone invited me over for dinner and served crap like that I would never go back there again…I make by own granola bars, and my own breakfast cereal and my own homemade bread and I grow my own bean sprouts, and I spend an entire day on Sunday in the kitchen cooking healthy homemade food for me and husband to take to work with us during the week…when there is a will, there is a way…!!!

    tia…i like easy recipies. i have to cook for 7 people every night and it is tough. i will make homemade meals with fresh ingredients or i will order pizza or chinese depending on the night. i will fill in with easy recipies like the one you shared with frozen and boxed foods. i do it all, ladies, and i think most of us are like that…no?

    One thing i made ONCE describes what i always eat?? If you read any of my posts ever, you would see me telling Oriana that I made Baklava and Moussaka for our Thanksgiving. You always make it sound like American’s are bad or wrong. If it makes you feel anybetter, I happen to eat lots or fruits and veggies…like i said im a nurse. I live 3 hours away from the American boarder. Unlike you, we are not vegitarians. Not so easy and quick to make. Im sorry…but my daughter gets my attention first and formost…re-read the recipe. It is all made with low-fat foods. ( my frozen meatballs were MY homemade meatballs)

    In answer to your question, Yes i was always with my Yiayia and my mama when they were cooking. However, i am not your typical greek. I was raised canadian and am Catholic.

    I also work full time but I always find time to cook for my husband and myself homemade food…the way i was taught at home by my mother…I buy local fresh produce…organic dairy and eggs and stay away from anything that has eyes i.e. I’m vegetarian so I eat a lot of rice and vegetable based proteins and it’s all quick to prepare and very healthy…I’m not bitter I’m just shocked at the unhealthiness of it all.

    Here ya go ladies!!

    1 pkg. (120 g) STOVE TOP Lower Sodium Stuffing Mix for Chicken
    1 can (10 fl oz/284 mL) low fat condensed cream of mushroom soup
    1/4 cup milk
    1 pkg. (320 g) frozen meatballs
    2 cups frozen peas or 1 cup frozen peas and 1 cup frozen corn niblets
    1 cup shredded CRACKER BARREL Cheddar Cheese Light – Made with 2% Milk

    Preheat oven to 400ºF. Prepare stuffing mix as directed on package; set aside.
    Combine soup and milk in 13 x 9 inch baking dish. Stir in meatballs and peas; sprinkle with cheese. Top with the prepared stuffing.
    Bake for 30 minutes or until heated through.
    Prepare as directed, substituting 1 can (19 fl oz/540 mL) diced tomatoes for the soup, omitting milk and using Italian-flavoured meatballs and Kraft 4 Cheese Italiano Shredded Cheese.

    Anyone interested in a Meatball Casserole? 30 mins. to make…Simple and easy! I made it tonight. I usually make everything from scratch ( my greek grandmother would SHOOT ME haha!) but i just started back to work…i loved it, my husband loved it as well!

    I agree all the way with Tia and Kimora’s mommy! What is the big deal? People can always scroll past and life is too short to be nitpicking about every little thing!

    I enjoy the ladies on here and find them very interesting as well as enjoying their views and opinions.

    Everyone knows I have a special bond with Nicki and Tia, and there are others that I really like and admire too, DMITZ, Deeds, Sandra, Mellynn, just to name a few, and I miss Xena. I hope she is okay and I know her son has gotten married by now. I thought about her at Halloween!

    Kimora’s mommy, you are a sweet person, no need for you to worry about apologizing for anything my Dear!

    So Cathi, bear with us, you might even get some good recipes like I did from Andrea, or actually learn something you might be interested in.

    I love that naturally curly hair! So cute! I think she dresses her so sweet, like a little girl should be dressed, they grow up so fast, and then it is jeans and tee shirts as teenagers love! Love the little pants she has on!

    Gerri looks fantastic…she has been rockin’ the lovely locks for the past year or so, and the flowy tops and dresses…very feminine & soft.

    Her daughter is so sweet and love the curly hair! Who is her father? Gerri is a beatuiful mum – and so glam, too!

    Haha yeah I think I mentioned before that my daughter has a rabbit like that….it appears that Bluebell is quite attached to it and takes it everywhere! She is sooo cute. I love her expression on the first picture…so animated.
